Banana Muffins

Recipe by Chef Dale Sniffen

Preparation time: 20 minutes
Cooking time: 20 minutes @ 180°C
Makes: 12 / muffin tin size

Dry Ingredients:

  • 220gm self raising flour (sponge flour)
  • ½ cup caster sugar

Wet Ingredients:

  • ¾ cup buttermilk or milk
  • 1 egg
  • ¾ vegetable oil
  • 2 ripe bananas mashed up or berries

Method:

  1. Sift all dry ingredients together into a mixing bowl.
  2. Make a well in the middle of the flour.
  3. Beat milk, eggs and oil together.
  4. Pour the wet ingredients into the dry ingredients.
  5. Lightly mix 12 times into a batter
  6. Stir in mashed banana.
  7. Fill muffin tin ¾ full of batter.
  8. Bake for 20 minutes.
