Banana Muffins

Dry Ingredients:
- 220gm self raising flour (sponge flour)
- ½ cup caster sugar
Wet Ingredients:
- ¾ cup buttermilk or milk
- 1 egg
- ¾ vegetable oil
- 2 ripe bananas mashed up or berries
Method:
- Sift all dry ingredients together into a mixing bowl.
- Make a well in the middle of the flour.
- Beat milk, eggs and oil together.
- Pour the wet ingredients into the dry ingredients.
- Lightly mix 12 times into a batter
- Stir in mashed banana.
- Fill muffin tin ¾ full of batter.
- Bake for 20 minutes.
