Preparation time: 30 minutes.
Cooking time: 10 to 12 minutes.

Ingredients

  • 250 grams of self-raising flour.
  • 100 grams of softened unsalted butter.
  • One and a half tablespoons of caster sugar.
  • 50 millilitres of buttermilk (enough to make a soft dough).
  • Two egg yolks.
  • Sweetened strawberries or sliced, fresh fruit.
  • Unchilled (room temperature) butter to serve with the shortcake.
  • Whipped cream.
  • Cookie sheet (20cm to 23cm)

Method

  1. Preheat your electric oven to 220 degrees Celsius.
  2. Place a sheet of baking paper over your cookie sheet.
  3. Pour the flour into a mixing bowl.
  4. Cut in the butter to the flour and stir (like making pastry) so that the flour looks like breadcrumbs.
  5. Stir in the buttermilk and the egg yolks to form a soft dough.
  6. Knead the dough for one minute on your baking paper, then roll the dough into a layer that is 2cm thick.
  7. Using a cookie cutter, turn the dough into little shortcakes that look like scones.
  8. Arrange your shortcakes on a cookie sheet and bake in a hot oven for 10 minutes or until golden brown.
  9. When they are still warm, split the shortcakes in half with a fork. Add butter, sweetened strawberries or fruit and whipped cream.
