Quantity: makes 450g of fresh pasta

Ingredients

  • 300g (or 2 cups) durum wheat or plain flour
  • ΒΌ teaspoon salt
  • 3 eggs (55 to 60g)
  • 1 teaspoon olive oil

Pasta Recipe

  1. Combine flour and salt and sift through into a large mixing bowl.
  2. Make a well in the middle and break eggs and oil in the middle.
  3. Incorporate egg and flour with the back end of a mixing spoon. This should form a firm like dough.  Knead or work the dough for 10 minutes.  Allow it to rest in the fridge for 30 minutes.
  4. Lightly flour a bench and start rolling out the pasta dough 3 mm thick or use a pasta machine.  Cut pasta to whatever thickness you want.

Cooking Method

Pasta cooking rule: for every 100 grams of pasta you will need 1 litre of water.

With a little help from an adult, bring 5 litres of water to a rolling boil with a tablespoon of sea salt. Toss in prepared pasta and cook for 6 minutes.

Again with help from an adult, pour cooked pasta through a colander. Allow the pasta to steam for 5 minutes in the colander before serving; this satge is called al dente. Toss through the olive oil. parmesan cheese, salt and pepper to taste, or your favourite pasta sauce.
