You will love Socket's latest recipe for sweet, delicious ginger bread paw prints. Simply follow the instructions and get busy in the kitchen.
What you need!
125gm soft butter
½ cup brown sugar
½ cup treacle
1 egg yolk
2 ½ cups plain flour, sifted
1 tablespoon ginger powder
1 tablespoon mixed spice
2 tablespoons bicarb of soda
What you do!
Beat the butter and sugar until light and pale in colour. Beat in treacle until well combined. Add yolks one at a time. Sift all dry ingredients together and combine with the butter and sugar mixture until dough forms. Knead for 10 minutes then refrigerate for 25 minutes until firm.
Roll dough out around 6mm thick between baking paper. Using a round biscuit cutter, cut out circles and place on a baking tray lined with baking paper.
Use your fingertip to press oval shapes into the circles in the pattern of a ‘Socket paw print’, as per the picture below.
Bake in oven at 180c for 10 – 12 minutes. Glaze ginger bread while still warm.
Glaze
½ tablespoon caster sugar
1 tablespoon warm water
¼ teaspoon gelatine
Stir until all ingredients are dissolved. Brush on the Ginger Bread Paw Prints while they are still warm.
Icing
1 egg white @ room temperature
1 ¾ cups icing sugar, sifted
¼ teaspoon lemon juice
Whip egg white until frothy. Gradually add sifted icing sugar until stiff peaks form, stir in juice. Load into a pastry bag with a small nozzle hole or a plastic freezer bag with a very small hole cut in the corner. Pipe around the oval shapes to decorate the paw prints. Enjoy!
